Flavours... an obsession



Hello!!!!!

Dear friends!One of my obssessions (no comments) is reading Cooking books and finding new interesting stuff... meaning new recipes... cooking secrets... easy recipies that make me see as a Godess with my invitees... Due to my work I travel a lot and I always stop in supermarkets to try and find different flavours (spieces, teas, coffees, cookies) and I also browse other countries cooking magazines and talk with new acquaintances about recipes and where to find them.Yesterday I returned from Chicago. And one of my companions (named Debbie) talked to me about this great magazine (I did not know about) named "Cook´s Illustrated" (America´s test kitchen). She sent me the link and... it is simply fantastic!!!!! All I have ever dreamt for is there! and I can´t tell about the mag itself! I will scan some recipes and publish them here...I will try and browse for other new stuff every day so as to share with you! Hope you like it as I do!

Scones caseros

* colocar en un bol grande el 1/2 kilo de harina,junto con la azúcar y la sal,mezclar.
* en otro bol batir los huevos y la leche.Esta preparacion se le agrega a la anterior ayudandonos con una cuchara de madera.
* hechar la masa sobre la mesa expolvoreada de harina común unir bien la masa luego aplanarla con las manos hasta que quede unos 2 cm de espesor.
* Cortar con un molde de unos 2 1/2cm de diametro.
* Colocarlo en bandejas enmantecada y llevar a horno hasta que queden apenas doradas.

  • 1/2 k harina leudante
  • 1 tasa de azúcar
  • 1 cuchara de sal fina
  • 200 g de margarina
  • 3 huevos
  • 1/2 tasa de leche
  • harina común necesaria para ayudar en el amasado

Rogel rápido

Estirar los discos de empanadas hasta lograr el tamaño de un plato mediano, pincharlos con un tenedor, acomodarlos en una asadera seca y cocinarlos en horno unos 10 minutos aproximadamente. Una vez fríos, rellenar con dulce de leche en varias capas. Batir las claras con el azúcar hasta obtener un merengue consistente y cubrir el alfajor.
Ingredientes
  • 1 paquete de tapas de empanadas
  • 1 kg. de dulce de leche
  • 4 claras de huevo batidas a punto de nieve
  • 100 grs. de azúca

Masa de Panqueques

Colocar en un bol los huevos y la sal, batir bien y agregar de a poco la harina alternando con la leche, hasta obtener una preparación omogenia, chirle sin grumos, dejar reposar 10 minutos, preparar los panquenques.En una sartén tipo panquequera de 18 cm. de diámetros, calentarla sobre la llama, pincelarla con manteca derretida, poner un cucharoncito de la mezcla y hacer correr rápidamente para que cubra bien toda la panquequera cocinar a fuego moderado, cuando los bordes comiencen a dorarse, el panqueque estará cocido de ese lado, darlo vuelta con una espátula y dejar cocinar unos minutos del otro lado.
Nota: Se tiene que echar cada vez una pequeña cantidad de pasta para obtener panqueques finos, se debe pincelar la panquequera con la manteca cada vez que se prepara un panqueque.

  • 3 huevos
  • 1 pizca de sal fina
  • 250 gr. de harina común
  • 1/2 litro de leche

Masa para pizza

Colocar la harina en forma de corona, en un bol, agregar la levadura disuelta en el agua tibia donde se habrá agregado el aceite, sal y azúcar, mezclar estos ingredientes tomando de a poco la harina hasta formar un bollo, amasar sobre la mesa unos cuantos minutos hasta que la masa este lisa y suave. Colocar el bollo en un bol tapar con papel film, arriba un repasador y llevar a un lugar templado hasta que leude el doble de su volumen, en ese punto colocar la masa sobre la mesada, estirar con la punta de los dedos y colocar sobre la pizzera aceitada, darle forma a la pizza y dejar reposar en lugar tibio unos 15 minutos, cubrir con la cubierta que se desea, o bien hacer un tipo de prepizza cocinando solamente la masa primero, aceitando ligeramente la superficie, o con una ligera capa de salsa de tomate. Llevar a horno de temperatura moderada unos 10 a 15 minutos.

Papas rellenas con queso

Ingredientes
  • 6 papas medianas a grandes de forma linda y tamaño parejo
  • 1 cda. aceite de oliva
  • 50 grs. de manteca
  • 5 cdas. de leche caliente
  • 8 cdas. de queso en hebras
  • 1 cebolla de verdeo picada y rehogada
  • sal y pimienta

 
 
 
 
 
 
Lavar las papas, secarlas y untarlas con el aceite de oliva;
salarlas y ponerlas sore una placa para horno 
cocinarlas en horno moderado por 60 a 70 minutos, o hasta que al pincharlas con un cuchillo estén tiernas
Dejar entibiar 10 minutos y sacarles una tapa;
pelar las tapas, descartar la piel y ubicarlas en un bol.
Ahuecar el resto de la papa dejando por lo menos 1 cm. de borde para no romperla.
Reservar los cascos que parecerán botecitos.
Pisar la papa que se sacó junto con la manteca, la leche y hacer un buen puré.
Salpimentar.
Agregar la cebolla de verdeo picada y el queso en hebras, mezclar hasta integrar bien.
Rellenar los cascos y volverlos a ubicar sobre la placa de horno.
Hornear a temperatura moderada, hasta derretir el queso y lograr un lindo dorado.

Crab Cakes

These crab cakes are a step-up riff off a recipe found years ago in Ruth Reichl's Comfort Me with Apples. The difficult thing with crab cakes is that they don't hold together that well when forming them, and they can easily fall apart when frying them. The trick is to handle them delicately to begin with, and then chill them on a breadcrumb-lined pan for at least an hour before cooking them. Just that time in the fridge will go a long way in helping them stay together as they cook. There isn't a lot of binder in this recipe, so it needs the chilling time.

Crab Cakes Recipe

We started with two 2 lb Dungeness crabs, which were then cleaned and cracked, resulting in about 1 1/4 pounds of lump crab meat.

Ingredients

  • 1 lb (around 0,5 kgrs... 0,454 kgs to be exact) lump crabmeat, picked through and any bits of shell removed (try not to break up the lumps of crabmeat as you pick through it)
  • 1/2 stick (1/4 cup) unsalted butter (divided, 1 Tbsp and 3 Tbsp)
  • 1/2 cup chopped shallots
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon of sweet paprika
  • 1/2 teaspoon freshly ground black pepper
  • 2 Tbsp prepared tartar sauce
  • 1 teaspoon lemon zest
  • 1/4 teaspoon Tabasco
  • 2 Tbsp chopped fresh parsley
  • About 4 slices white bread, crusts removed, torn into small pieces, yielding 2 cups
  • 2/3 cup fresh bread crumbs

Method

1 Heat one tablespoon of butter in a small skillet over medium high heat. Add the shallots and a half teaspoon of salt. Cook until the shallots are translucent, a couple minutes. Do not brown. Let the shallots cool.
2 Whisk together the eggs, Worcestershire sauce, remaining half teaspoon of salt, paprika, freshly ground black pepper, tartar sauce, lemon zest, Tabasco, parsley, and the cooked shallots. Gently fold in the crabmeat and torn bread, taking care again to not break up the lumps of crab meat. The mixture will be very wet. Using your (clean) hands, take a scoop of the crab mixture and gently form it into a patty form about 2 1/4 inches across and 3/4 inches thick. Continue until you've made 12 crab cake patties. Line a rimmed tray with a piece of wax paper just large enough to hold the cakes and sprinkle the bottom of the tray with half of the bread crumbs. Set the crab cakes in one layer on the top of the layer of bread crumbs and sprinkle them with the remaining bread crumbs. Cover the crab cakes loosely with another sheet of wax paper and chill in the refrigerator for at least one hour.

3 Heat the remaining 3 tablespoons of butter in a large non-stick skillet on medium high heat. The butter will melt and foam up. When the foam subsides, working in batches, place the crab cakes in the pan (do not crowd the pan), and cook until golden brown, about 3 minutes on each side.
Makes 12 crab cakes.

Pork Chops with Dijon Sauce Recipe

Ingredients
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • 4 center-cut rib or loin pork chops, boneless or bone-in (whatever you prefer), about 1 1/4 inch thick
  • Salt
  • Freshly ground black pepper
  • 1/4 cup chopped shallots or green onions
  • 1 cup dry white wine
  • 3/4 cup chicken stock*
  • 3/4 cup heavy cream
  • 2 Tbsp Dijon mustard
  • 1 Tbsp chopped parsley (optional)
*If cooking gluten-free, use homemade chicken stock or gluten-free packaged stock.

1 Pat the pork chops dry with paper towels. Sprinkle salt and pepper all over them. Heat the olive oil in a large skillet over medium high heat. Stir in the butter. As soon as the butter has melted, add the pork chops to the pan and sear them, about 2-3 minutes on each side. Reduce the heat slightly if the chops brown too quickly.

2 Remove the pork chops from the pan and pour off most of the fat. Add the green onions or shallots and cook them on med high heat until softened, about 1 minute. Add 1/2 cup of the wine and bring to a boil, deglazing the pan by scraping the brown bits from the bottom of the pan. Stir in the stock and return chops to the pan. Bring sauce to a simmer, reduce heat, cover and cook until chops are cooked through (145°F internal temp), about 10 to 15 minutes.

3 Remove the pork chops to a warm platter; cover with foil to keep warm. Add the remaining half cup of wine. Increase the heat to high to boil the pan juices. Reduce the juices by half, about 3 minutes. Add the heavy cream and boil 3 minutes more, until sauce reduces and thickens, and scraping the pan with a wooden spoon leaves a trail. Remove from the heat and whisk in the mustard and parsley. If you want, add more mustard to taste. Place chops on a bed of sauce and serve.

Serves 4.
